Whole Foods Pot Luck with American Mothers Inc.

Has summer been speeding by for y'all? This year it seems I blink and it is almost over. My sweet little first born is starting kindergarten in two weeks. She is beyond excited, so am I, but I know this mama will be driving away with some tears in her eyes, too.
Anyway, SO MUCH to blog about. I've ventured out to several blogger meet ups and met some great gals. The kiddos and I have also been busy out soaking up sunshine.

Last night, I went to the Utah Valley American Mothers chapter meeting and was treated to this plate full of goodies:


So glad that we'll be doing a whole foods potluck each month as part of our meeting. There was a fantastic guest speaker - Karen Urbanek. Her energy alone got me excited about eating healthier with my family. Definitely looking forward to trying out the recipes we tasted. This one was my favorite from Karmel Larson -

Whole Wheat Cous Cous with Tomato & Basil Salad
-Karmel Larson 
2 cup cooked Whole Wheat Cous Cous (available in bulk from Good Earth) 
Two plastic containers of grape tomatoes 
A huge handful of fresh basil chopped up
1/2 red onion chopped up was tossed in with salt and balsamic vinegar added to taste
Combine and enjoy!

Sounds pretty easy, right? I didn't have the ingredients for the exact recipe today so I made my own cous cous with carrots, zucchini(first one from the garden!), and even sunflower seeds. My hubby and I loved it -  our little ten month old was quite the fan, too. The other two littles weren't as convinced, but at least took a bite.
